The paper makes an inventory of the rural non-agricultural activities, which can be classified into two categories depending on the time allocated to the respective activities: independent ones, those that are practiced in exclusivity, using the entire working time, and the complementary ones, those that are carried out to complete the available working time, by those involved in agriculture. To increase the relevance of the analysis, the paper attempts to quantify the most important methods for increasing the rural business environment competitiveness on the basis of documentation, analysis and processing of statistical data. In general, no rural development program can be conceived in the absence of the essential role played by agriculture, but the rural economy is more developed and more dynamic if it has a more diverse structure, with a higher share of non-agricultural economy.

The organic production of cereals is a one of main agricultural activity in organic farms in the European Union. That production is very difficult and requires a lot of producers experience and effort. Most of all, the organic production of cereals should meet the environmental goals, but also the economic goals of producers. The first aim of the study was to explore the condition of cereals organically produced in EU countries. Secondly, the profitability of winter wheat and winter rye production in organic farms was examined, based on accountancy data of Polish FADN and Agrokoszty system. Despite the weaker production results, the organic farms in Poland may be competitive with conventional farms (at the similar production level i.e. the cereal’s growing area) due to lower direct costs incurred on the production and significant support by subsidies received.

Whey, by product from cheese production, having high content of protein, can be a source of indigineous yeast with proteolytic activity. This research aims to identify indigenous yeasts with proteolytic activity from homemade-mozzarella cheese whey. There were 2 kinds of whey collected throughout the making of mozzarella, the first whey was collected after the coagulation process and the second whey was collected after mozzarella curdling process. Each types of whey were inoculated into Potato Dextrose Agar (PDA) media modified with 3% yeast extract and 10 ppm Amoxicillin and were further incubated for 48 hours in room temperature. Each colony formed were then differentiated macroscopically and purified in a separate modified PDA media for 4 times. Purified colonies were further identified under microscope and only the colonies having yeasts morphology were tested for its proteolytic activity with paving block method using Nutrient Agar plus 3% Skim Milk, with formation of clear zone were measured as proteolytic activity. Yeasts with proteolytic activity were identified using RapID yeast plus system. The results showed 7 yeasts colonies found and proteolytic activity was only found in 1 isolate with ±9.5 mm diameter of clear zone. The isolate was further brought to identification and revealed as Trichosporon beigelii.
